QUICK CHEATY PIE!

I love a good, decadent chicken pie made with cream and wine, but this yummy little treat is really good,

I discovered a few tins in my larder that were nearing the use by date, mainly soups.  I'm not a fan of tinned soups, but Mr. loves them as a quick fix.  I found a Campbell's condensed chicken soup that had been hiding in there for some time and decided to make a pie (I know, Pie Week was on the 5th March, so I'm a little late).

I handily had some puff pastry and leeks in the freezer. The leeks we harvested a week ago and  I'd sauteed the lot and frozen what I didn't use at the time.


For the recipe, I sauteed one onion in some butter and a pinch of salt for one to two minutes before adding one crushed garlic clove and the cooked leeks (use one large or two medium leeks if cooking fresh).


Added a large chopped chicken breast and cooked until coloured. Sprinkled in some crushed black pepper and a teaspoon of mixed herbs.





Then  a small can of drained sweetcorn....


.... and a tin of Campbell's condensed chicken soup. You can add a little milk to get the consistency  you want. I wanted mine quite thick and had some evaporated milk left over from another recipe so used a bit of that.




You can make one big pie, but I made three smaller ones, one for  the freezer. It would have been nice  to have had four,  so I will up the ingredients next time so two meals can be frozen.




I just cut ovals of pastry out and cooked them separately on a cookie sheet and popped them on top of the heated filling.  I served them with roasted carrots and French beans.


We had to eat on trays in front of the telly, as the dining room is covered with my crafty junk at the moment.  It was great as we caught up on the Paralympic Games, which disappointingly, there hasn't been much coverage of. 

I am also in the process of finishing off a little crochet wip that I want out of the way too, so at least that will get my sewing machine off the dining room table!

TULIPS,  SOURDOUGH,  MANDALAS...OH, AND SNOW! I cannot believe we are already almost halfway through February.....where did January go for goodness sake? WE ARE NOT AMUSED! Her face says it all! As I mentioned in a previous post, this Bernat dog coat was meant for Pearl, but despite measuring her from collar to the base of her tail, it worked up in a larger size (my tension was off, I guess) and swamped her.  Lucky that she has a slightly larger sister! However, someone was not at all happy with it, refusing to co-operate in my photo shoot.   I was hoping for a canine, Ellie McPherson style strut on the decking, but Elsie was having none of it and flatly refused to look at me. It's quite mild here at the moment but when we have a nice cold snap, she might be more appreciative of it. I have also finished my Nordic Shawl. I bought my first bunches of daffs today, as my yellow tulips were shedding their petals. They look like a bunch of green artists brushes at the moment. I love the transparency of the tips, hiding those soon to be, beautiful blooms. Pearl is crashed out in the background after a mammoth walk this morning. So much for good weather today. It started beautifully, then blackened, then rained, then snowed and now we're back to glorious sunshine.  We took our chances and luck was with us on our walk and both dogs are now pooped.  I was quite excited when it started to snow, as it was the first we've seen this winter. I so wished it hadn't rained and the snow had settled for a few hours.  I do suffer from snow envy when I read other blogs and see shots of pure white fairy tale beauty.  Ah well.
